Raw Cauliflower Salad with Japanese Dressing
When it’s truly hot outside the thought of eating can be quite unbearable. It’s a chore just to heave yourself away from the air conditioning unit, let alone prepare a meal. Thankfully, this raw cauliflower salad will help keep you nourished and provide you with just enough energy to walk to the shop to buy a ice lolly, or twelve.
Raw cauliflower is a significantly healthier option than its cooked counterpart, retaining all the vitamins and minerals that are generally lost through cooking. It has a lovely squeaky texture and unique flavour worth trying if you haven’t already. Together with this aromatic Japanese dressing, this is a subtle and delicious little summer salad.

1 cup raw cauliflower
Half cup sliced cucumber
Half cup cooked edamame beans (substitute with broad beans or peas if necessary)
2 spring onions
1 cup shredded chicken
Quarter cup sweetcorn
Sprinkle of poppy seeds (optional)
25ml sushi vinegar
10ml sesame oil
10ml soy sauce
1/2tsp white sugar
For the dressing simply pour all ingredients into a small bowl and whisk until well combined.
For the salad, divide the raw cauliflower into small florets and combine in a large bowl with the sliced cucumber and spring onions, the cooked edamame, the sweetcorn, avocado and shredded chicken. Sprinkle with poppy seeds and dress.
